Duck with Spiced Citrus Sauce
Method
Preheat oven to 200°C.
Using a small, sharp knife score the skin of the duck breasts soak into the breasts and spread the salt and pepper over each duck breast.
Heat a non-stick oven-proof frying pan over medium heat. Add the duck, skin-side down, and cook for 3-4 minute. Turn the breasts over and place the pan in the oven for a further 7-10 minutes. Remove from the oven, cover with foil and set aside for 5 minutes to rest.

Meanwhile, make the sauce. Combine the water, sugar and ginger in a small saucepan and bring to the boil. Reduce heat and allow to simmer, stirring occasionally for about 7 minutes to reduce slightly. Add fish sauce and spices and simmer for a further 2 minutes. Stir through lime juice and orange and remove from heat.
Slice the duck, place onto heated serving plates and pour sauce over. Serve with steamed asparagus.
