Chef eschews city lights
Dazzled by the bright lights of Sydney's CBD, chef Paul Toogood left the kitchen of Cibo e Vino in the outer suburb, Castle Hill, last year.
He had hoped to further explore his identity as a chef, and add to his CV featuring names like Buzo and Aqua Luna in Sydney and The River Cafe in London.
But now he's back to the quiet streets of Castle Hill once more.
The decision came after he realised his style was closely linked to the simple and rustic cooking
he'd produced in every dish for his five years at Cibo e Vino.
Paul says he feels lucky to be welcome back with open arms to the restaurant he helped establish.
Now he's back with his "family", he hopes to reinvigorate the Cibo e Vino's menu with good, clean and local food.
Preferring to allow the produce to drive his inspiration, Paul makes
regular trips to the farms of his suppliers and creates menus based on
the highest-quality harvest of the season.
